VARIETIES
Viognier
The white aromatic variety with the golden color. It is believed to have gone to the south of France from parts of Croatia. The aromas of flowers and kernel fruits characterize the grapes of this variety. It has spread all over the world giving wines that are strong and rich. Relatively new variety for the Greek vineyard with the total cultivated area not exceeding 240 hectares, half of which are cultivated in Halkidiki and Thessaloniki.

VINIFICATION
The grapes are transferred from the vineyard to a cold chamber, where they are cooled for 24-36 hours. The grapes are then crushed and the grape pulp remains for cold extraction at a temperature of 6-8° C for 8-12 hours. Alcoholic fermentation takes place at a temperature of 16-17° C and the wine then remains with its fine lees for 2 months. This is followed by bottling.
ORGANOLEPTIC FEATURES
The wine has a bright golden color, elegant aroma of exotic fruits and flowers, cool acidity and a rich aftertaste.
WINE PAIRING
Served at 10-12⁰C and is ideal with oily fish, shellfish and Asian cuisine.
