Xinomavro
The King of Macedonia, the “ambassador” of the Greek vineyard all over the world. Cultivated in Goumenissa since 1750 under the name Popolka. It ripens in late September and gives wines with deep ruby red colouring, aromas of small forest fruits, dried fruits and dehydrated tomatoes, rich in tannins that soften down with the aging of the wine to finish with an extremely long aftertaste.
In July 2019, the modification of the specifications of the PGI Slopes of Paiko (Plagies tou Paikou) was approved and published in the official journal of the European Union, where it is now possible to produce white wine from red grapes (white vinification – blanc de noir).
Negoska
The variety of Goumenissa. Native Macedonian variety cultivated together with Xinomavro in the region, under the name “Negoska Popolka”… Goumenissa is the only vineyard in the world where you can easily find this variety. The medium acidity and tannin character of Negoska wine balances the wines of Goumenissa while giving them a fruity chocolate flavor.
VINIFICATION
Classic red vinification, with pre-fermentative cold maceration, alcoholic fermentation with the pomace, maturation in French oak barrels for at least 18 months and reduction aging in bottle for 6 months.
ORGANOLEPTIC FEATURES
Pure medium intensity ruby colour. Typical aromas of sour blackberry on the nose, concentrated, small red fruits but also dried fruits such as fig and plum, hints of sun-dried tomato. The palate combines freshness due to the high acidity with a medium body which nevertheless has intensity of aromas and ripe tannins.
