Xinomavro

The King of Macedonia, the “ambassador” of the Greek vineyard all over the world. Cultivated in Goumenissa since 1750 under the name Popolka. It ripens in late September and gives wines with deep ruby red colouring, aromas of small forest fruits, dried fruits and dehydrated tomatoes, rich in tannins that soften down with the aging of the wine to finish with an extremely long aftertaste.

VINIFICATION

Biodynamic vineyards at an altitude of 320 meters on clay and limestone soils. Classic red vinification. Maceration for 25 days and then aging for 12 months in 1,200 liter oak barrels. 2 years in tank and after bottling one year in bottle. During the whole process no oenological preparation is used, only a minimum of sulphite is used during bottling when necessary.

ORGANOLEPTIC FEATURES

Purple-red color with crimson highlights. Its aromatic character combines notes of plums that marry harmoniously with ripe red fruits. Aging in 500 liter oak barrels adds to its aromatic palette. The taste impresses with its velvety character, described by phenolic ripeness and rich structure. The finish is particularly long, condensing the complex character of the wine.

WINE PAIRING

It is served at 18⁰C and can be combined with red meats, smoked meats and spicy cheeses.
