Sauvignon blanc
The variety started its journey from the Loire Valley in western France and has conquered the world. Citrus, green apple and peach aromas are the primary aromas of the variety, which is fully adapted to the Greek Vineyard. Today more than 7,500 hectares are cultivated throughout Greece, with the Regional Unit of Kavala with 1,600 hectares cultivating the largest areas, followed by Drama and Florina with 1,160 and 690 hectares respectively.
VINIFICATION
Monovarietal Sauvignon blanc from mountain vineyards. The grapes are harvested when we have a good acidity-sugar ratio because this is how we create rich aromatic wines with expressiveness. After destemming the grapes are taken to a pneumatic press where we get the free-run must and the first pressings. The must is then cooled and de-leached. The pure must is fermented at a temperature of 16 degrees for about 15 days. After fermentation is complete, we stir the fine lees for 2 months to stabilize and develop the aroma and round out the flavor.

WINE PAIRING
Although its delicate personality predisposes us to enjoy it on its own, it can accompany dishes with white meats, pasta, shellfish and fruit. Serve cold at 10-12ºC.
