Xinomavro
The King of Macedonia, the “ambassador” of the Greek vineyard all over the world. Cultivated in Goumenissa since 1750 under the name Popolka. It ripens in late September and gives wines with deep ruby red colouring, aromas of small forest fruits, dried fruits and dehydrated tomatoes, rich in tannins that soften down with the aging of the wine to finish with an extremely long aftertaste.
Negoska
The variety of Goumenissa. Native Macedonian variety cultivated together with Xinomavro in the region, under the name “Negoska Popolka”… Goumenissa is the only vineyard in the world where you can easily find this variety. The medium acidity and tannin character of Negoska wine balances the wines of Goumenissa while giving them a fruity chocolate flavor.
VINIFICATION
The must is left with the pomace for 2 days at low temperatures. The temperature is then allowed to rise gradually so that alcoholic fermentation and long maceration can begin in the tank. Once the alcoholic fermentation is complete, the wine remains in contact with its lees for 8 months before being transferred to French oak barrels where it is aged for at least 12 months and a further 6 months in bottle.
ORGANOLEPTIC FEATURES
This red wine has a deep red color with a complex bouquet of aromas of small red fruits such as cherry, raspberry and blackberry. There are also aromas of spice, olive, tomato and vanilla. The palate is full-bodied, with rich tannins and a complex and long finish.
WINE PAIRING
Served at 16-18⁰C, it goes well with red and white meats (grilled and cooked with sauces), game, pasta and yellow cheeses.
