Xinomavro
The King of Macedonia, the “ambassador” of the Greek vineyard all over the world. Cultivated in Goumenissa since 1750 under the name Popolka. It ripens in late September and gives wines with deep ruby red colouring, aromas of small forest fruits, dried fruits and dehydrated tomatoes, rich in tannins that soften down with the aging of the wine to finish with an extremely long aftertaste.
In July 2019, the modification of the specifications of the PGI Slopes of Paiko (Plagies tou Paikou) was approved and published in the official journal of the European Union, where it is now possible to produce white wine from red grapes (white vinification – blanc de noir).

VINIFICATION
The vinification of Xinomavro’s red grapes is done with the blanc de noir method (white vinification) – immediate draining of grape must, zero contact with the pomace, a small part of the alcoholic fermentation (10%) is done in French oak barrels, then it is matured for 7-8 months with lees.
