Xinomavro
The King of Macedonia, the “ambassador” of the Greek vineyard all over the world. Cultivated in Goumenissa since 1750 under the name Popolka. It ripens in late September and gives wines with deep ruby red colouring, aromas of small forest fruits, dried fruits and dehydrated tomatoes, rich in tannins that soften down with the aging of the wine to finish with an extremely long aftertaste.

VINIFICATION
The grapes are transported from the vineyard to the winery in a portable oil-fueled refrigerator and are preserved at a low temperature. This way they retain their aromas, all their characteristics and freshness. The ideal final temperature for the grapes to start to be delivered is 3-4 degrees. The first step is the sorting of the grapes by an automatic laser sorter and the addition of dry ice while the pomave with the must are transported directly by pipeline to the double-jacketed chilled tank. This is where the alcoholic fermentation process begins, during which the must remains with the pomace. At the end of fermentation, the wine is transferred to French oak barrels for about 9 months and then ideally in 4-6 months to the bottle.
