Xinomavro
The King of Macedonia, the “ambassador” of the Greek vineyard all over the world. Cultivated in Goumenissa since 1750 under the name Popolka. It ripens in late September and gives wines with deep ruby red colouring, aromas of small forest fruits, dried fruits and dehydrated tomatoes, rich in tannins that soften down with the aging of the wine to finish with an extremely long aftertaste.

Merlot
One of the most popular varieties worldwide. Relatively young variety, derived from a cross between an old French variety and the Cabernet Franc variety. In the region of Goumenissa it gives wines of high alcohol content with a soft taste and aromas of black fruits. Of the 15,000 hectares of the Greek Vineyard, about half are cultivated in northern Greece with Thessaloniki and Halkidiki being the regions with the largest areas.

Cabernet sauvignon
The King of red wines. Much has been written about its origin. Most likely the variety comes from a cross between cabernet franc and sauvignon blanc. The variety is renowned for its ability to produce quality wines that can be aged. Deep colour with aromas of black fruits and spices are the dominant characteristics of the wine. In the Greek vineyard, 20,000 hectares are cultivated, with Fthiotida and Messinia hosting the largest areas with 1,550 and 1,300 hectares respectively.

VINIFICATION
Each variety is harvested late and vinified separately with a long maceration of up to 12 weeks depending on the variety. Aging: 18-24 months in oak barrels.
ORGANOLEPTIC FEATURES
Deep purple colour with violet highlights. Aromas of ripe forest fruits, tomato, green pepper and dried plum, with hints of caramel and spices. Velvety, full-bodied red fruit jam flavour, with rich tannins and a spicy aftertaste.

Game, grilled meats with spicy red sauces, meat pies, sausages, peppery smoked hard cheeses.
