Xinomavro
The King of Macedonia, the “ambassador” of the Greek vineyard all over the world. Cultivated in Goumenissa since 1750 under the name Popolka. It ripens in late September and gives wines with deep ruby red colouring, aromas of small forest fruits, dried fruits and dehydrated tomatoes, rich in tannins that soften down with the aging of the wine to finish with an extremely long aftertaste.
Gewürztraminer
White variety with Alsatian origin. Relatively new variety for the Greek vineyard. It occupies an area of 65 ha, with the centre of establishment in Laconia, where 12.7 ha are cultivated, followed by Florina with 8 ha. The word Gewürz in German means spice and represents the aromas that the wines of the variety have with intense spice flavours.
VINIFICATION
The grapes are of the Xinomavro variety. They are harvested at about 12 Baume and are vinified like a white wine. During fermentation when the sugars are towards the end, we cool the must down and stop the fermentation. After 15 days and after its clarification the wine is then filtered and bottled.
