Cabernet Sauvignon
The King of red wines. Much has been written about its origin. Most likely the variety comes from a cross between cabernet franc and sauvignon blanc. The variety is renowned for its ability to produce quality wines that can be aged. Deep colour with aromas of black fruits and spices are the dominant characteristics of the wine. In the Greek vineyard, 20,000 hectares are cultivated, with Fthiotida and Messinia hosting the largest areas with 1,550 and 1,300 hectares respectively.

VINIFICATION
The grapes are transferred from the vineyard to a cold chamber, where they are cooled for 24-36 hours. Subsequently, they are crushed and the grape pulp remains for cold extraction at a temperature of 10-14° C for 3 days. This is followed by classic red vinification, i.e. alcoholic fermentation at a temperature of 18-23 °C with the pomace. This is followed by aging in 225 liter French oak barrels for 8-12 months.
ORGANOLEPTIC FEATURES
The wine has a deep red colour, an intoxicating aroma of the variety dominated by spices harmoniously tied with wood and tobacco notes, rich round tannins and an intense aftertaste.
WINE PAIRING
It is served at 16-17⁰C and ideally accompanies beef in tomato sauce, lamb in the casserole and spicy cheeses.
