Xinomavro

The King of Macedonia, the “ambassador” of the Greek vineyard all over the world. Cultivated in Goumenissa since 1750 under the name Popolka. It ripens in late September and gives wines with deep ruby red colouring, aromas of small forest fruits, dried fruits and dehydrated tomatoes, rich in tannins that soften down with the aging of the wine to finish with an extremely long aftertaste.

Negoska

The variety of Goumenissa. Native Macedonian variety cultivated together with Xinomavro in the region, under the name “Negoska Popolka”… Goumenissa is the only vineyard in the world where you can easily find this variety. The medium acidity and tannin character of Negoska wine balances the wines of Goumenissa while giving them a fruity chocolate flavor.

VINIFICATION
Created from the combination of the Xinomavro & Negoska, a typical PDO Goumenissa. The harvest of the two local varieties begins in late September. Classic red vinification is followed, with maceration continuing until the end of alcoholic fermentation, with gentle stirring. After the end of the malolactic fermentation, the wine is aged for a year in French oak barrels, mostly large volume.
ORGANOLEPTIC FEATURES
It has a bright ruby red color and an ethereal nose, with intense ripe red fruits of strawberry, cherry and strawberry that blend harmoniously with the herbal character of sun-dried tomato, rosemary and the distinctive notes of jasmine and spice. On the palate it is elegant, with crisp acidity and silky tannins accentuating the juicy fruit structure, giving depth, aromatic balance and a good lengthy finish.
A wine that can be pleasantly consumed both fresh and in its first 6 years of age.
WINE PAIRING
It accompanies lamb or duck carrés but also traditional Greek dishes such as mousaka, stuffed tomatoes and meat with tomato sauce.
