Xinomavro

The King of Macedonia, the “ambassador” of the Greek vineyard all over the world. Cultivated in Goumenissa since 1750 under the name Popolka. It ripens in late September and gives wines with deep ruby red colouring, aromas of small forest fruits, dried fruits and dehydrated tomatoes, rich in tannins that soften down with the aging of the wine to finish with an extremely long aftertaste.

Merlot

One of the most popular varieties worldwide. Relatively young variety, derived from a cross between an old French variety and the Cabernet Franc variety. In the region of Goumenissa it gives wines of high alcohol content with a soft taste and aromas of black fruits. Of the 15,000 hectares of the Greek Vineyard, about half are cultivated in northern Greece with Thessaloniki and Halkidiki being the regions with the largest areas.

VINIFICATION

Spontaneous fermentation and malolactic transformation with native strains. The must is left with the pomace during alcoholic fermentation according to the organoleptic characteristics of the grapes each year. Light pigeage is applied during the alcoholic fermentation. At the end of the alcoholic fermentation the wine is transferred to 225 L French oak barrels where it remains for 12 months. The final stage requires the wine to remain in bottle for 6 months. The interventions during vinification are the minimum required in order for the wines to evolve their character and express the authentic character of the terroir of Goumenissa.

ORGANOLEPTIC FEATURES
Deep ruby red color with brick red highlights, mouth full of light tannins and soft acidity, aroma of ripe fruit, plum, tomato, roasted spices and dill notes.
WINE PAIRING

It is served at 16-18⁰C and can be combined with red and white meats, as well as with dishes with red sauce.
