Malagouzia<\/h3>\n

Charismatic, white, Greek variety of Nafpaktia that in 1970 approached the limits of extinction. The cultivated areas were increased in the 80s by winemakers with vision and today it is among the rising Greek varieties. White flowers and citrus characterize the aromas of the grapes that will produce high quality, medium acidity wines. In Greece, 4,700 ha are cultivated, with Fthiotida, Thessaloniki, Aitoloakarnania and Halkidiki being the most important areas of cultivation of the variety.<\/p>\n

The grapes are transported from the vineyard to the winery in a portable oil-fueled refrigerator and are preserved at a low temperature. This preserves their aromas, all their characteristics and freshness. The ideal final temperature for the grapes to start to be delivered is 7-8 degrees. The first step is sorting by an automatic laser sorter and the addition of dry ice while the pomace with the must are being transferred to the press, which is also cooled. In which they will remain for about 6 hours according to the appropriate schedule. During this time the must is transferred to the tank where, after the flotation process, alcoholic fermentation begins at 13 degrees. Once the alcoholic fermentation is complete, the wine is bottled fresh and cannot be aged.<\/p>\n
